
I've been having better luck with vegan muffins lately. I find adding about a tablespoon of vinegar to the wet ingredients dramatically improves their "loft" and nice, fluffy tops.
Dan and I are brave -- very brave. We're going to venture outside the Twin Cities metro area this weekend, even though it's Memorial Day weekend and everyone and their next-door neighbor will be heading out of town, too. (We're hoping the traffic will be easier early Saturday morning??)

Thanks for the comment! I have to commend you on your "5 things or less" plan. I read about that recently and thought that would be a fantastic way to eat more whole foods and less processed junk. I didn't even think about the environmental aspect of it though, even cooler!
ReplyDeleteI agree with your addition of vinegar. I have started adding vinegar to a lot of my baked goods and even my pancakes (which become fluffier and lighter). We're going to head to Chicago in a couple of weeks and I think I'll take your advice and make a batch of muffins to bring along. Have fun on your trip!
