When bad things happen to good muffins.

My vegan lemon poppyseed muffins molded! I lost three of them! No fair!

New Policy: In the future, all muffins will be stored in the fridge.

  2. I was thinking the same thing Vicki!

For real (like the other one is not for real!)... store them with a foil or if you don't like aluminum, use a bag/plastic-ware but don't let any condensation happen. It can be good for a bit, but not after a while, as it gets mushy.

I don't think I've ever had a baked product mold on me! I eat them too quickly.

  4. I always freeze anything baked good that I can't use up with a day or two... I've had muffins go bad evenin the refrigerator. It is just as great when I let it thaw or nuke it for a few sec's.

  5. I haven't had trouble with muffins molding in the fridge in the past . . . and I have frozen things on occasion, too. That's why I only made 6 -- thought I could mow them fast enough! Oh well. At least they hit the compost, and won't end up in a landfill.

Kai, thanks for the info about the book tour! I had heard she was going to be in town Saturday, but I didn't know what time. I have to babysit Saturday night! Bah! Oh well -- take copious notes for me!
