Lunch yesterday:
Whole-wheat pasta with a roasted eggplant-tomato sauce, sauteed kale with garlic and a few chili flakes, and white beans cooked with garlic and herbs.
Part of breakfast this morning:
I also had tea, orange juice, and scrambled eggs. (And drizzled a little pure maple syrup on my waffles, of course. The two waffles that didn't end up in the freezer, that is!)
Part of lunch today:
A smoothie of nothing more than frozen blueberries and orange juice.

I LOVE eggplant in pasta like that... I wish I was eating at your house tonight!
I definitely am going to check out the books below.. I have the original printing of Diet For A Small Planet.. that was actually my mom's... it is very old.

Melody, I don't eat nearly enough eggplant, or other purple/blue things, for that matter. I'm trying to find ways to get that color into my diet! Other than blueberries and blackberries, I'm stumped, though.
Courtney, thanks! I just use the basic waffle recipe in the Betty Crocker cookbook, substituting at least half (if not all, which I did this time,) white-whole-wheat flour for the AP flour called for.

Hey Catherine! Long time, no talk. Glad to see we are both blogging again.
I'm still pretty wrapped up until mid/late July. I swear I'm trying to clear up my calendar and stop scheduling myself crazy, but it's tough. I know we still need to do a dinner!!!
Food looks great. Love smoothies - I put spirulina in mine, so they usually end up almost black and no longer pretty like yours.

put a waffle maker on my list, too! & the smoothie looks perfect to me, and Netflix served up "Donnie Darko" for us last night - gotta love them!
