If I was smart enough (or less lazy, maybe?) I'd figure out how to put the accents in the proper places in the title. Oh well. Use your imagination!
Funny what I've found as "comfort food" lately . . .
Cucumber, red pepper, and avocado sushi! Yum, yum, yum, extra yum.
A Greek-inspired pasta salad including whole-wheat spirals, mushroom, red onion, grape tomatoes, cucumber, artichoke hearts, red onion, red pepper, chickpeas, kalamata olives, and crumbled feta. I made a simple vinaigrette from some lemon juice, roasted garlic, olive oil, pepper, and oregano. Again with the extra yum. (I've been taking this for lunch all week long and have not yet grown sick of it!)

Sushi = yum! Pepper, cucumber and avocado are my favorites in sushi as well. I'm really drooling over the salad. I had a Greek pasta salad at a work BBQ one time and it was delicious. I should have gotten the recipe. Hmm...maybe you should post yours. (hint hint) :o)
ugh! i've still never made my own sushi, and your pics look so good! stop mocking me and my sushi virgin- ness!

veggiegirl, thanks! the pasta salad is STILL really good, even though i've been eating it all week long. (and i'm not usually much for leftovers!)
carrie, the recipe is pretty much what I wrote down -- i didn't measure anything. let's see . . . about half a package of pasta, can each of artichokes and chickpeas, jar of olives, hunk of feta, half a red onion, about 10 mushrooms sliced, half a cucumber, most of a pint of grape tomatoes, etc. for the dressing, i think i juiced two lemons, used a big glug of extra-virgin olive oil, several dashes of dried oregano, and about four cloves of roasted garlic. (oh -- and pepper.)
michelle, absolutely no mocking intended. :) try making sushi sometime when you have a sleepy baby -- it's really quite easy!
oh, i will, someday. just gotta get all the ingredients + time and patience to learn ;)
