Fastest Meal in the (mid)West!

Dinner tonight took less than ten minutes to prepare, if you don't count the time it took to boil water:

Gnocchetti tossed with pesto, pan-fried baby zucchini, and cherry tomatoes. And that's all.

And it was damn tasty. But I promise I'll make my own gnocchi next time, instead of relying on the prepackaged kind. :)

P.S. I cooked over two pounds of black beans last night. Look at my little army o' beans! (12 cups total!)

After cooling, they all marched to the freezer for later use.

Actually I had to look up "Gnocchetti" which looks cute. (Cute food is fun!)

I love the idea of freezing the beans. They take so long to make, you want to do up a lot when you finally do boil 'em up! How's the texture after they're defrosted--do they stay the same?

Ricki, the texture of the beans is pretty much the same after being frozen, as far as I can tell. It's best if they are covered with liquid for freezing, so they don't dry out.

And that is a TON of black beans, I love the look of all those black beans though, they are my favorite.

We seriously need to use up our zucchini from our crop share. Unfortunately, it's not our favorite veggie, but we love gnocchi, so maybe we'll give this a try.

Did you use liquid when freezing your black beans? What did you use - water?

Those are great little containers and I bet they stack well in the freezer!

Crystal, I just fill up the containers with the beans and ladle some of the cooking liquid over them until they are just about covered -- nothing too special.

And those containers DO stack really well in the freezer -- that's why I bought them! :)

OMG, Catherine, you really ARE crazy! I cannot believe you boiled beans and cooked and used your stove last night! It was disgustingly humid and hot!

It looks really really good, though...I hope it was worth it!! The dish of gnocchi with the tomatoes and veggies and pesto looks delish!

Would you believe that I've never made dry beans??? I know, I am a bad vegan! I can't even believe it myself... I must try soon!

Your gnocchi dish looks fantastic! Definitely try making your own sometime (if you haven't). It's quite a lot of work, but so rewarding when you're done! Yum!
