Garlic and Potato Soup

from Vegetarian Times . . .
example
Ingredients:
olive oil or margarine
onion
water
vegetable broth
potatoes
garlic
salt
pepper
parsley for garnish

I was expecting this soup to be sort of like liquefied mashed potatoes, but I was quite wrong! Light, refreshing, and very simple, this might even make a nice chilled soup during the summer months.

On the side: a wedge of brown soda bread and some sliced tomatoes with olive oil, salt, and pepper.

It's not even October yet, and I'm already loving Soup Month. Wahoo!

veg*triathlete, thanks! I got lucky with that tomato -- it was a leftover from Dan's camping trip last week. I wasn't sure how good it was going to be . . . but it was excellent!

Anonymous, thanks for stopping by. No, I don't have a budget for Soup Month, beyond my normal grocery budget. My plan is to actually save a little money in the long run, by cooking with the produce that is in season (locally) now, enjoying some of it, and freezing some of it for later. I always thought of soup as a budget-friendly meal, anyhow, since one of the main ingredients is usually water!

I am always leery of potato soups, because like you, I expect watery mashed potatoes. My boyfriend made a really super potato and spinach soup a few weeks ago, and I was blown away. Simple but filling.

Wow! I thought I was the only one zoomed in on those tomatoes. They really look good and make me want to go out and find one and just bite into it. I LOVE tomatoes.

Your soup month post made me think of the wondeful chickpea veggie pasta soup (not recalling the name) that I tested for you awhile back. It really grew on me and I should make it again.

The potato soup and the escarole/bean/garlic soup all look yummy. The cool nights are making me start to crave warm soup even though it still heats up during the day.
