Thursday night special

I decided to make spinach and tomato Dal, from Sundays at Moosewood, for dinner tonight:

I've been fiddling around with this recipe quite a bit, and may have it almost exactly where I want it -- it's still not spicy enough, but it is aromatic, flavorful, and deeeeeeeee-licious! (Brown rice hiding underneath.) Dan hasn't tried any of this yet, but we'll see what he thinks.

I love dal -- it's a relatively easy meal, utilizing mostly pantry staples with a handfull of fresh/frozen ingredients. It's only minimally time-consuming, most of the cooking time spent simmering away unattended on the stove. I'm glad I've put the effort (and ingredients) into figuring out this recipe, because it was totally worth it! Another go-to meal to add to my arsenal.

mmm looks amazing. i've definitely wanted to try making dahl. pretty simple & super tasty.

my go-to meals are ones that i don't need recipes for and i've made a million times, like stir-fry, eggplant parmesan, simple soups, and pasta dishes.

OOOOooo, I love a good stir fry! Tofu, green onions, garlic, broccoli, zucchini, cauliflower, baby spinach. So yummy, and it's a big hit whenever I make it! You can make any sauce to go with it - peanut sauce or a hot n spicy one, and it goes really well with noodles OR rice!

Looks delicious! I just love dahl. It is one of my goto meals too.

Same with split pea soup and brown rice pasta, easy homemade marinara, veggies and tofu..

my favorite to go meal is probably an Amy's Vegan Burrito with Avocado and Salsa on the side.
I also love to make pizzas out of Wraps.

Favorite go-to meal: brown rice with corn, spinach, cumin, garlic and whatever vegetables are handy, with baked tofu. mmmm

My go to is soup. I feel confident I can make a soup out of pretty much anything.

Stirfrys and bean stews are my go to meals. A spicy dal is always nice too!
