salad days

It's hot.  (And I don't have A/C!)

"Too hot to sit on the couch" hot.

"Too hot to sleep" hot.

"Too hot to turn on the stove" hot.

("Too hot to eat" hot, for that matter!)

Except, well, one still kind of has to eat.  Consequently, I have been eating nothing but salads for days.

Salads are definitely on our plates when it's hot--chickpea or lentil salads with vinaigrette and greens, or potato or egg salads with the boiling done early in the AM. Those tempeh salads look great for the heat!

Salads, coleslaw, zucchini noodle "pasta" and big huge bowls of watermelon! Lots and lots of watermelon...you gotta stay hydrated, right? ;-)
