a couple of treats from this week

When we were at the Farmer's Market last weekend, I had a conversation with Dan that went something like this:

Dan: "Ooohhh . . . apple butter!"
Me: "Buy some."
Dan: " Nah . . . "
Me: "Why?"
Dan: "Eh . . . "
Me: "I'll make you some."
Dan: "OKAY!"

So, I made apple butter in my crock pot.

I didn't measure, but I peeled, cored, and chopped about 12 cups of apples and dumped them in the crock. I then added 2 teaspoons ground cinnamon, 1/4 teaspoon ground cloves, 1/4 teaspoon salt, and 1/2 cup agave. Cooked it on high for 1 hour, low for 12 hours, (left the lid cracked for the last 45 minutes so some of the moisture would cook off,) and, voila!

Yummy deliciousness. Some in the fridge for now, some in the freezer for later.

I also made cookies this week:

Oatmeal-Chocolate-Coconut-Almond Cookies:

Cream together:
1 cup Earth Balance (softened)
1/2 cup natural granulated sugar
1/2 cup brown sugar

Stir in:
1 tablespoon EnerG whipped with 1/4 cup water
1 teaspoon vanilla

Stir in:
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup whole-wheat pastry flour
1/2 cup baking cocoa

Stir in:
2 cups rolled oats
1/2 cup unsweetened flake coconut
1/2 cup sliced almonds
1/2 cup chocolate chips

Bake at 375 for 8 to 11 minutes, depending on the size of your cookies.

I'm going to have to take these cookies in to work tomorrow . . . they just keep hopping into my mouth!! :)

I. Love. Apple. Butter. I made some a few weeks ago and it was far too quickly gone.

And those cookies - oh my goodness. Brett would probably LOVE these cookies!

I still have crockpot apple butter from last year, so I probably won't be making it anytime soon. I will miss that wonderful smell though.

Mmmmmm....I LOVE apple butter! I have made it on the stove before, but never in the crock-pot. I have been meaning to try it that way, though. I have some apples on hand--I just may let it cook away while I am at work tomorrow!

I just made apple butter for the first time yesterday and it is so delicious! I don't have a crock pot, so I just made it in a big ole soup pot. It was super-delicious though.
