fat-coated fat

I made a Thai peanut-coconut type stir-fry for dinner tonight, and It's fabulous! Probably from all the fat: peanut butter, peanut oil, toasted sesame oil, (lite) coconut milk, and yes, even tofu has a little fat! There are other healthy ingredients in it too, like tamari, rice vinegar, red curry paste, carrots, onions, garlic, broccoli, and mushrooms. Lots of mushrooms. Mmm. All slopped over soba noodles. Mmmm.

I never really liked stir-fry as a child, and I still don't care much for it as an adult . . . but the one exception to the yuk-stir-fry rule is the fat-coated fat version. :)

Ah, well. Sometimes, you just gotta live a little.

I've been using a lot of oils and eating like a fatty lately. I don't even care. It tastes good dang it!

i totally agree, catherine! i have some soba noodles in the fridge begging for some fat! i think i'll give it to them.

OMG...last night Conan O'Brien put on a stick on Mustache for a while--it was hilarious! I heart mustaches. And Conan, cause he's down wit the mustaches.

Sounds delicious!.. eating this once a week or so is not a bad thing. it's a lot healthier than eating a steak and french fries!

Kleopatra, it was indeed a groovy stir-fry -- I ate almost the whole thing! Just a few bites left that wouldn't fit in my tummy.

Teddy, me too! I wonder whether there's some survival mode kicked in by the hot weather? Usually, my appetite disappears when it's this hot. Huh.

Vicki, soba noodles are my FAVORITE. They are so quick and so good for you!

Crystal, my Dad's actually more of an adventurous cook than my mom -- he's the "make it up as you go" cook, while my mom is definitely tied to recipes. He's also been the pie maker and bread baker in the house, ever since I was a little kid.

Emily, yeah, except for the saturated fat in the coconut milk, all good fats. :) I have no fear of fat -- except trans fats, of course! Ew.

Michelle, you'll have to come over for a fat-coated fat stir-fry sometime soon. :) Hooray for Conan and mustaches!

Megan, awesome! My hair's been kinda fried lately from all the swimming and sun, so maybe it's telling my body to ingest more fat?? ;-)

Go ahead and live! Enjoy your food. Moderation is the key. This one sounds good with lots of healthy stuff.
