
Dal and Eggplant, Red Pepper, and Spinach curry (both from Sundays at Moosewood,) over Basmati rice, with Chappati (from The Enchanted Broccoli Forest) on the side.
A fantastic Friday night feast! Never quite as good as the Indian restaurant, but this effort came DAMN close.

I adore Indian food as well--I always say they must start simmering it in the morning to serve the patrons at night. If we cooked ours that long, it would taste just as good! ;)
