not so sure about this . . .


What's that, you ask? Why, eggplant pickles, of course!

(I'm sure you're all slapping your foreheads right now, saying, "duh! Should have known!")

Obviously, I'm trying something new. It used a LOT of olive oil. (Like well over a cup.) Let's hope they're worth it!

The kicker? They have to marinade for TWO WEEKS. So I won't know for a while!

(I know . . . the suspense is killing me, too.)

I have a hard time loving eggplant. If the pickles are good, be sure to report, perhaps it will make them a bit more appealing to me. :)

Also, WOW, that's a lot of oil!
