After 6 3/4 cups sugar . . .

. . . 9 1/4 cups flour, 3 cups Earth Balance, 6 (free range, organic, local) eggs, and a whole host of other ingredients, I bring you . . .

Christmas Cookies 2008:
(The candies are vegan; everything else is dairy-free.)

Toffee:
example
(from the Betty Crocker Cookbook -- this online version is a little different from the one in my cookbook, but you get the idea!)

Candied Hazelnut Brittle:
example
(A double batch -- from Cooking Light)

Mexican Chocolate Cookies:
example
(Also from Cooking Light)

Yummy Molasses Crackles:
example
(From Eating Well)

Pistahio-Cherry Sandwich Cookies:
example
(Sandwich cookies? Yeah. I cut the recipe in half and made thumbprints instead, to keep the calories down and simplify my life a little bit. From Vegetarian Times.)

Lemon-Rosemary Butter Cookies:
example
(Also from Vegetarian Times . . . don't know why they're dragging their feet on posting the pistachio cookie, though!)

And last, my Grandma Weber's Christmas Cookies with peppermint frosting:
example
(Oh yeah . . . don't forget the sprinkles, too!)

All of the cookies together:
example

Verdict? I had my fair share of trials and tribulations this year, (including having to re-do one cookie after ruining the first batch,) but overall, all the treats are an overwhelming success! The molasses cookies and lemon rosemary cookies may be frequent repeats -- they are both FANTASTIC!!!!!

And now, the unloading of the sugar begins. I took some packages of cookies to church this morning for choir friends, and I'll take a big tray to work tomorrow. I hope Dan's family is hungry for cookies, because I'll be bringing a LOT down with us to visit later this week!

Merry Christmas to all, and to all safe travels, successful baking adventures, and a delicious New Year!

The treats look beautiful! And your food pictures are, again, gorgeous! I made VT's lemon-rosemary butter cookies last Sunday, and I LOVE THEM. I can't decide whether them being bite-size is a good thing or bad thing ... :)

That is one gorgeous array of sweets! Glad they all turned out great in the end. The lemony rosemary cookies do sound unusual--worth a try. :)

Enjoy your sweet-filled holidays!
