my version of a tofu scramble!

I wish I had a camera! I just made the best tofu scramble for breakfast -- yukon gold potato, red onion, garlic (of course,) cremini mushroom, asparagus, yellow bell pepper, fresh tomato, and some "secret spices." It's sooooo tasty!

Fortunately I took notes, so this one's going in the cookbook!

I don't have a publisher yet, so I don't have any idea when/if the cookbook will come out at all! Thanks for your enthusiasm, though!

Looking forward to it! I love a good tofu scramble, and spices can give it such variety.
I will be back in the testing game once I return from NY on the 16th. I think the honey almond granola needs more flavor - the cherry suggestion was great. Perhaps a bit more of vanilla extract or some almond extract. Cinnamon might help it. After trying the final product, it was a bit more browned than I was looking for, still a basic good granola flavor - just not much of one, and I don't like supersweet vanilla. I did love the texture and the flax aspect. I preferred the agave batch I made as opposed to the honey.
