another recipe . . .

I had my recipe for Hoppin' John returned to me because okra was unavailable in this tester's area . . . anyone else interested? Email me if you are! Thanks!

Catherine - I would, but I'm a bit unsure about okra. Maybe that will be a veggie I discover in a couple years :)

No problem! I'm sure I'll have a couple of emails by the end of the day! Okra's really good -- give it a chance sometime. I thought I didn't like okra for a long time . . . and then I made it myself once and LOVED it! The little seed-type things in the middle are the best -- sweet, with a slight firmness to them . . . a little like smaller green peas, but BETTER. Yum!

I never liked okra either, but now I do.

I would have taken this recipe, but I haven't even emailed you the results of the last testings I did!

Catherine, yes, you can send me the 2 pages about polenta! Thanks a million! ANd I can test this if it is ok to use frozen okara.

Oh, but before I really commit to testing, what's a hoppin john?

I can test it too, if you need me to! I love okra!

Hoppin' John is a southern dish with black-eyed peas, okra, and other veggies. (Peppers and onions . . . still want to test it, Leslie?) It's usually served on New Year's Day, and eating it is said to bring good luck for the New Year. Many people like Hoppin' John served over brown rice, but I prefer mine over cornbread. Yum!

Courtney, I'll email you the recipe!

Would it be good over cornmeal (clears throat... polenta!)? Yes, I still want to test it. Peppers and onions are Ray's fav veg combos and I just give him my onions because I like the flavor.

I try it because I don't eat many (or any?) southern dishes. Just SW.

Hoppin' John would be awesome over polenta, I think! Never would have thought of that -- awesome idea! Recipe headed your way . . . !!
