the awesome artichoke

I scored four very reasonably-priced artichokes at the co-op last weekend, and have been devouring them here and there all weekend. Like many, I assume that something that tastes spectacular MUST not be all that good for me . . . so I had to look up nutrition facts for an artichoke. As a vegetable, I assume they are relatively low in calories, but I was more curious about vitamin/mineral content. I discovered, courtesy of Wikipedia:

I could eat artichokes everyday, they're such an overlooked veggie!

Artichokes are just about the perfect food in my opinion...I love them SO much! Artichokes and watermelon are my favorite foods in the whole world...if I could live off of them I would!

I am so happy that there is another artichoke lover out there too!

I LOVE artichokes! I've actually never eaten a fresh one though.

Only canned and frozen. I've seen them at the store here in Missouri. I'm going to have to be brave and pick one up!

artichoke is my FAV veggie... I go on walks with my friend and one of the houses we walk by has artichokes growing.. it takes a lot of will power for me to not take them haha

me too! and especially artichokes. ours turned out fabulous and you were right! they took almost an hour to cook - worth the wait! :)
