I'm finally a food blogger again. :)
Stuff I've been eating:
A breakfast smoothie. I don't remember what I put in this, but it was good.
A breakfast quinoa recipe from Vegetarian Times -- tasty delicious! Surprisingly, not terribly filling, however. Maybe I'll add more nuts next time, so I can make it through the morning with out a grumbling tummy.
My basic, ever-changing, always tasty, black beans and rice. I took some of this to work for lunch today. My boss popped her head into the classroom to ask us a question, looked at my lunch and said, "oh, that doesn't look good to me." I was shocked! I said, "it's just beans and rice -- I love beans and rice!" She replied, "hm -- you eat so healthy!" What a weird thing to say. I can't complain too much, though -- she did give me a raise today. (Effective Monday! And it's a pretty reasonable raise, too!)
And, I went grocery shopping today. This was insane. Here's what I bought:
BREAD
1 loaf local oat bran bread
BULK
1 pound orzo
1 1/2 pounds organic long grain brown rice
CHEESE
6 oz local goat cheese
FROZEN
10 oz local, organic, frozen, in-pod edamame
PACKAGED GROCERY
12 oz box organic whole-wheat couscous
16 oz Bragg's
small bottle apple juice
unbleached muffin liners
PRODUCE
1 organic cucumber
4 organic bananas
3 organic avocadoes (99 cents each!)
2 organic red grapefruit
2 organic lemons
4 organic artichokes ($1.19 each!)
1 bunch organic asparagus
1 bunch organic rainbow chard
2 heads organic purple garlic
organic bulk baby mixed greens
sprig organic fresh basil
12 local, organic cremini mushrooms
2 organic red onions
2 organic yellow onions
1 organic yellow bell pepper
4 local, organic yukon gold potatoes
1 organic zucchini
1 organic sweet potato
1 bunch organic beets with tops
4 local, hydroponic tomatoes
3 pound bag organic pink lady apples
bag yellow pearl onions
8 oz bag local, organic spinach
carton organic grape tomatoes
package local, organic fresh oregano
REFRIGERATED GROCERY:
10 oz Wildwood superfirm tofu
Earth Balance buttery sticks (this is an exception to my "5 or less" rule)
LightLife 3-grain tempeh
dozen local, organic, free-range eggs
Everything, except for the artichokes, was on the list. I'm going to be busy this weekend, and into next week! Recipes planned include: "You've got peanut butter in my chocolate cookies," blueberry muffins, roasted tofu & veg with garlic mashed potatoes, eggs/greens/hashbrowns/grapefruit (Dan's favorite breakfast,) sushi, tempeh bacon sandwiches, beet-top quiche, and an orzo salad with goat cheese.
AND, 31.24% of my purchase was from local companies, which isn't bad, considering we've had a very cold, very wet, very dreary "spring" so far. Can't wait for the farmer's market! (And spring-like weather, too.)

Congrats on your raise! That is awesome! And your groceries look SO good...artichokes (drooling!) and basil and zucchini...yum!

veganforone, the quinoa is fantastic! I'm just disappointed it's not more filling -- kind of like how couscous isn't all that filling (even the whole grain kind.) Rats!

Thanks, Courtney! I'm so excited about the artichokes . . . and they were so CHEAP! Go get some, quick! (And, yes, that 2nd photo is quinoa -- it tastes amazing!)
I am so glad that I looked at your blog today! Only Day 1 of ETL and I am missing everything salty and sweet :( Your meals and produce haul are so inspiring, though! I can't wait to see the upcoming meals..oh and I am making the recipe you gave me this weekend! yay!

Funny story about your boss...I think most of us get that a lot though- the whole "ew raw veggies" or even "ew veggies" period. I adore black beans though, and your beans and rice looks so delicious!! So I don't know what she was talking about, but you can send me some! :)
