a compliment (plus food!)

I received a great compliment from my AT, Abby, at work on Friday. I forget how we came to be talking about this, but she asked me whether I had ever taken an ecological footprint quiz. I said that I had taken one several times, and she asked me what my score was. "1.7 Earths," I replied. She looked shocked, and said, "How is that possible? You are the greenest person I know!" I went on to explain that since I live alone in my apartment, my use of space is still pretty high -- plus, I can't garden, compost, or air-dry my laundry because of where I live, which are a few big things that still put my score way up there.

Still . . . I'm the greenest person she knows! What a cool compliment. And also cool that being green is becoming something to ascribe to these days!

On to food:

Courtney and I had to change our plans this weekend, but I decided to bake anyways. "You've Got Peanut Butter in My Chocolate Cookies," from Eat, Drink, and be Vegan:

(I don't own the cookbook, but Courtney had checked it out from the libarary and copied down a few recipes, this being one of them!) These cookies are incredible! So rich, chocolatey, sweet, and delicious . . . I took a few to work on Friday and shared them with my coteachers and our assistant director . . . everyone was REALLY impressed. I'm changing the worldview on veganism, one cookie at a time. :)

Even though I'm not vegan, I really try to bake vegan as much as I can. Why? Several reasons: I find vegan baking a new, somewhat intersting challenge, I like that vegan sweets are a little more guilt-free than their cholesterol-laden counterparts, and I like baking vegan for work since my AT keeps kosher, and then she can enjoy whatever I bring in whenever she wants! (Plus, when we do cooking projects with the kidlets, we have to bake vegan since we have both dairy and egg allergies in our classroom. They've never complained!)

Lastly, dinner last night:

Roasted tofu and veggies (sweet potato, pearl onions, zucchini, yellow pepper, and mushrooms,), garlic mashed poatoes with Punk Rock Chickpea Gravy, and steamed artichokes with a dipping sauce of Earth Balance, lemon juice, garlic, salt, and pepper. Holy yum. Dinner took me a LONG time to make last night, but it was totally worth it. :)

mmm, your dinner and of COURSE those cookies (I love that ED&BV recipe!), look fabulous. yum!

wow! that dinner looks awesome. i love the punk rock gravy...i could eat that stuff by itself ;]
