My first FLOG is seriously lacking in the vegetable department. I'm low on veggies right now, (except for what I have planned for our New Year's Eve dinner,) so I did the best I could with what I have around!
BREAKFAST:
peanut butter toast and a banana.
Not pictured: black coffee and my vitamin.
LUNCH:
Strange to be home for lunch in the middle of the week, but I had a dentist appointment, so I went in to work late.
Pepper Jack quesadilla with loads of salsa, a Cara Cara orange, and
a caramel and a molasses cookie.
SNACK:
pumpkin chocolate chip muffin
DINNER:
leftover dal and the last chappati
I snuck four olives while I was cooking. :)
ANOTHER SNACK:
apple with peanut butter and a biscotto. (Is that the singular form of biscotti?)
EXERCISE:
I walked to the dentist, which was 1.2 miles. I intended on walking home as well, but it was SO FRIGGIN' ICY I didn't want to risk slipping and falling on my ass. Safety first, right?
Expect big food excitement tomorrow night . . . Dan, his brother, Ryan, and Ryan's girlfriend, Sara, are coming over for dinner, and I have a right feast scheduled! Until tomorrow . . . .

random blabber
I've decided I may start "flogging" again. Why? Because the plethora of leftover holiday cookies in my apartment, the constant junk food at work, and cold weather (which translates to lack of exercise) is making me feel sluggish and gross. (I don't know that I've actually gained any weight . . . but that doesn't really matter, eh?)
Call it a New Year's resolution, call it getting smart, call it what you will, but I'm going to cut out the junk and start getting some exercise, people!
Expect flogging and exercise log to begin today or tomorrow.
P.S. I know I don't write about music very often, but it's one of my other crazy freakish obsessions. I enjoy seeing local bands play live, although I don't get out much these days, (unless Dan's playing, of course!) Dan has recently brought all of his CDs over to my house, since he doesn't have a CD player at home, and the CD player in his car isn't working properly these days. It's so exciting to have access to so much new music!! Woo! Dan's on a west African music kick lately, which is very fun, but I have also been loving Sun Kil Moon. Anybody else know about them? If not, check them out!

According to Dan, this is the best dal I've made yet, (with spinach and tomato,) scooped up with homemade chappati. Mmmmmmmmmmmmm!!!
(Dan used to live in Bangladesh, so he knows his dal. And he misses it dearly.)

I AM SO EXCITED TO START BAKING FROM ARTISAN BREAD IN FIVE MINUTES A DAY! Lucky me, I hadn't spent my Christmas money from Grandma and Grandpa yet. Can't wait to take the dough sitting in my fridge and my new baking stone for a test-drive!
Although I'm a little sad to return to work tomorrow, I did thoroughly enjoy my five-day weekend! Back to the grind . . . but only for a few days. :) Love those paid holidays, don't you??

back in business
After spending the holidays away from my own kitchen, I was excited to get back to town last night and do a little cooking!! Dan and I spent a LONG time discussing what to have for dinner during our drive back -- and we settled on sushi:
Veggie rolls with red pepper, cucumber, and avocado for me, and a little ahi sushi grade tuna for Dan. Not pictured: miso soup.
There are even a couple of rolls left calling my name . . . sushi for breakfast is GREAT.
Oliver was happy to see us return as well:
Well, either that, or he was just happy to make mischief in my suitcase while I was unpacking.

Verdict? I had my fair share of trials and tribulations this year, (including having to re-do one cookie after ruining the first batch,) but overall, all the treats are an overwhelming success! The molasses cookies and lemon rosemary cookies may be frequent repeats -- they are both FANTASTIC!!!!!
And now, the unloading of the sugar begins. I took some packages of cookies to church this morning for choir friends, and I'll take a big tray to work tomorrow. I hope Dan's family is hungry for cookies, because I'll be bringing a LOT down with us to visit later this week!

feeding the elves
My friends Ann and Tiffany came over tonight to help me decorate Christmas cookies! Before we frostened, sprinkled, licked fingers, ate a couple of cookies, and generally experienced a major sugar-overload, I did make dinner for the three of us:
Moosewood's Black Bean and Chipotle Soup, with Skillet Cornbread (from Veganomicon) on the side.
Tiffany and Ann were great elves -- we had all of the cookies decorated in less than an hour! We were pretty silly and sugared up by the end, and wanted to try and make a really ugly cookie:
It's not that ugly, actually! We swirled together all four colors of frosting that I made, and loaded on the sprinkles that had collected in each of our cake pans we were working over.
I'll post about ALL of the cookies soon, I promise!

potstickers!
Dinner Tuesday night:
Miso soup and edamame potstickers! (Dan and I did share these -- don't worry about me eating them all by myself.) :)
I had had a package of dumpling wrappers in the freezer FOREVER, and figured it was about time I used them up. Yum! Originally a Cooking Light recipe, I modified these slightly, changing up the spices a little bit. They were great!

friggin' amazing!
I made (late) dinner tonight:
My recipe for sloppy lentils on a wholegrain bun, and Liz's (from Food Snobbery is my Hobbery) friggin' amazing coleslaw! (Yes, it is that good! Go make some . . . NOW!) Not that Liz's recipe could be improved upon, but I did add some poppyseeds . . . 'cause, in my opinion, poppyseeds just sorta belong in coleslaw.
It's kind of a happy Monday! I have Christmas cookie dough in the freezer, laundry in the dryer, and delicious food in my belly! What more could a food snob want?

Saturday night supper
After a long day yesterday, (I had choir practice in the morning, and Dan and I ran errands on foot/via bus all afternoon,) I decided we were deserving of something a little special for dinner. I had been eyeing the recipe for Corn Chowder with Roasted Poblanos from The New Mayo Clinic Cookbook, so there you have it:
The only change I made from the original recipe was to substitute lite coconut milk for the 1% dairy milk called for in the recipe -- no noticible coconut flavor that either of us could detect. This change made the soup vegan, too!
We did, however, top the delicious vegan soup that I made with some shredded pepper-Jack cheese. The cheese definitely upped the deliciousness factor, in my opinion, but it would be great without!
And, 'tis the season to crave sweets, right? However, I haven't started my holiday baking, so I've been lacking in the dessert department. Enter: key lime pie!
I swear this is the easiest pie in the world, containing only three ingredients: eggs, sweetened condensed milk, and lime juice. I had the pie in the oven in less than five minutes! (I did by a wholegrain, pre-made piecrust to speed things along further.)
I may start cooking dinner here in a few minutes, to beat back the "Sunday Night Blues." Weekends are ALWAYS TOO SHORT, if you ask me!

Friday Night Feast!

Dal and Eggplant, Red Pepper, and Spinach curry (both from Sundays at Moosewood,) over Basmati rice, with Chappati (from The Enchanted Broccoli Forest) on the side.
A fantastic Friday night feast! Never quite as good as the Indian restaurant, but this effort came DAMN close.

I made it home from the store in one piece last night, despite my massive list:
I did pick up everything on my list -- no more, no less -- to the tune of $225. (It sounds like a lot, but I got a lot of food for that amount of money!) Three bags fit into my push-cart, I stuffed a few things in my backpack, and I slung one last bag over my shoulder. Only one minor casualty (one cracked egg) out of the whole excursion! Woot!
After I finished unpacking everything, I crammed in a few quick cooking projects last night, to boot.

DAN CAN COOK
But before I get to that . . .
. . . it's been a busy weekend! I have no pictures of Friday or Saturday meals, unfortunately. Why? Well, they were pretty boring/repeatish -- we had hot sauce glazed tempeh and messy rice again on Friday night (it's THAT good that I want to eat it two weeks in a row!) with a side salad, leftovers for lunch Saturday, and frozen pizza and salad for dinner Saturday night.
Why are we eating scrap-together meals? Well, we watched Driving Miss Daisy Friday night, (which I had never seen, by the way!), I had to work Saturday morning, we went shopping Saturday afternoon (NEW COOKBOOK!), and had tickets to the "Wild and Scenic Environmental Film Festival" sponsored by Midwest Mountaineering on Saturday night. The film festival was great, but LONG -- 3 1/2 hours long, to be precise! We saw some really interesting, thought-provoking, independent films, though! It was worth sticking around till the end. :)
Today was a little more laid-back. I made brunch:
Hashbrowns and mixed veggie scrambled eggs, topped with cheese and salsa.
This afternoon, Dan and I walked downtown to see the 8th Floor holiday display at Macy's -- it was quite cute! Dan said he had flashbacks to his childhood, when his family would drive up for the display each year. After walking through "A Day in the Life of an Elf," we hopped the bus south on Nicollet to Spyhouse coffee shop -- hot beverages, newspaper, and crossword puzzle for about an hour, before we came back to my place.
After some down time around here, we started dinner, which was largely Dan's project. (Although I made the rice and prepped all the veggies.) Dan expressed interest earlier this week in making a Thai curry with coconut milk and tofu, and I'm not one to give up the opportunity for a labor-free dinner on my part! See Dan cook:

Thai curry including tofu, green beans, eggplant, mushrooms, cauliflower, coconut milk, red curry paste, garlic, ginger, lemongrass, tamari, sriracha, fish sauce, and rice vinegar. Yum!
Dan headed back to his side of the river after dinner, and I whipped through a couple of baking projects:
Diann's pumpkin chocolate chip muffins, and
granola! (I promise it's not blurry in real life.) ;-)
And that's that. I have mountains of beans soaking to cook off tomorrow night, and just spent some time cleaning out my "beans and grains" cupboard. I have four different kinds of lentils around! How did that happen??

mini-cooking project
I've been craving hot apple cider. A weird thing to crave, I realize, but herbal tea just hasn't been cutting it lately, and cocoa didn't fit the bill, either. Enter, "fake-it" spiced cider:
Ingredients:
apple juice concentrate
water
stick cinnamon
whole star anise
whole cloves
whole allspice
whole cardamom
smashed fresh ginger
freshly grated nutmeg
Directions:
Chuck everything in a pot, and bring to a boil. Lower the heat and simmer, covered, for 25 minutes. Strain and serve. (Or cool, chill, and microwave a cup at a time as needed!)

Chuck everything in a pot, and bring to a boil. Lower the heat and simmer, covered, for 25 minutes. Strain and serve. (Or cool, chill, and microwave a cup at a time as needed!)

on a budget
I'm sure you can all relate, but I was on a rather strict budget at the grocery store tonight -- $68 strict, to be exact! Between a couple of specials and two member discounts, I squeaked out of the co-op with everything on my list, plus a couple of small impulse buys (mac and cheese, a persimmon, a Naked Juice smoothie,) for $67.99! Couldn't have planned that if I had tried. :)

stumbling upon deliciousness
I had planned on making spaghetti for dinner last night, until I remembered that I had picked up a package of tofu and a package of tempeh at the co-op last Wednesday. I began flipping through VCON, until I found not one, but TWO recipes for tasty deliciousness that I had all of the ingredients for!
Hot-Sauce Glazed Tempeh, with sides of Messy Rice (both recipes from VCON,) and sauteed mushrooms and chard. YUM.
I made a couple of substitutions in the tempeh marinade, including subbing veggie broth for the wine called for, and apple cider vinegar for the lemon juice called for. This tempeh was AMAZING! So flavorful, with an almost addictive tangy-spicy flavor. The rice was also spectacular, and very easy. (I did use brown rice, since I didn't have enough jasmine rice on hand, and increased the water a wee bit.) We both loved the citrusy-ness of the fresh coriander. Mmmmmmmmmm.
So glad I have leftovers for lunch today! I sense it's going to be a happy Monday, all things considered. :)

option: caramel
Part of this month's Daring Baker's challenge included optional caramels. I knew I wanted to make the cake, and whipped that out much earlier this month. Since I looooooove homemade caramels, but have never made them myself before, I did decide, very late in the month, that I would give them a try. Too late to really include them in my post, but still, here are my vegan caramels:
Simple enough to veganize -- Earth Balance instead of butter, coconut milk instead of heavy cream.
Method, however, was a bit more challenging. It took me three batches of caramel, mountains of sugar and golden syrup (at six bucks a jar!!! gasp!), a new silicone baking pan, confectionery waxed paper (at $8 a pack,) loads of sticky dishes, and one very sticky stove, to get these right. An expensive and time-consuming adventure, more than anything else! I hate to say it, but towards the end, I wasn't really having fun any more -- my frustration was taking over, especially when I wrecked my $20 cheese knife when cutting them. Grr.
Verdict, however? The caramels are AWESOME. Awesome, I say. Perhaps worth all that work? Perhaps not . . . but it's easy to forget how frustrating they were with a toasty, sugary, sticky, salty blob of goodness rotting your teeth away! :)

Daring Bakers Challenge -- Caramel Cake
This month's Daring Bakers challenge was a recipe for Caramel Cake with Caramelized Butter Frosting, developed by Shuna Fish Lydon.
I took it upon myself to be extra-daring, and veganized the cake and frosting recipe. I followed the original recipe as closely as possible, making a few changes:
~ Earth Balance buttery sticks instead of butter
~ omiting salt in the recipes (since EB has plenty of salt)
~ 1 tablespoon EnerG egg replacer whipped with 4 tablespoons water instead of eggs
~ 1 tablespoon apple cider vinegar added to the batter for extra lift
~ increasing the baking powder to 1 teaspoon, also for extra lift
~ almond milk instead of dairy milk (or cream called for in the frosting)
A fun cake -- something different from the usual chocolate and vanilla cakes! I'm glad I only make a half-batch of the frosting, because it is VERY sweet -- almost too sweet for me. I was only able to enjoy a small piece of this cake before going on complete sugar-overload!
Since I'm not much of a cake lover, I managed to pawn most of this cake off on coworkers, my boyfriend, and friends. It was well-received by all! (And of course, no one could believe it was vegan!)

Happy Turkey-Free Day!
My parents decided to drive up from Milwaukee for Thanksgiving, because they were all concerned that I'd be spending the day alone. (I was okay with my original plan, but their visit gave me an excuse for an all-out cooking extravaganza! Plus, you know, nice to see them, all that.) So, we went grocery shopping Wednesday night after they got into town for some "raw materials." I provided the labor, and we had one helluva fantastic (vegan) Thanksgiving Dinner today!
Steamed green beans with lemon, Earth Balance, salt, and sliced almonds, stuffed squash (based on Urban Vegan's guidelines,) sweet potato casserole (based on a Cooking Light recipe,) corn casserole (based on a VCON recipe,) and cranberry chutney (tucked away in the freezer from two weekends ago.) Not pictured: tofu pumpkin pie for dessert!
My mom kept exclaiming how good everything was, and she wants me to send her the sweet potato and corn recipes. My dad just kept eating. :) It was a great meal!

way, WAY . . .
We took the kids in our class out for a walk today, which we typically do on Tuesdays. We decided to "sneak" up to the 50th floor of the IDS Building, which is the tallest building in Minnesota, and peek out the windows. (There is no observation room/deck in the IDS Building, so there are big signs everywhere reminding people NOT to come up and look around. Annoying, eh?) The kids had a lot of fun, and were pretty awe-struck at the view of the city (and the tiny cars, schoolbusses, etc.)
Anyhow, at pickup time, I asked one little boy today if he remembered where we went on our walk so he could tell his mom about it. He replied,
"We went in the skyways and we took the elevator way, WAY up high to the sky!"
Cute.

fridge-diving
I feel like I'm "fridge-diving" these days -- scraping together odds and ends to make somewhat nutritious meals! I seem to have a plethora of mushrooms left around, but not much else in the fresh produce department, so be prepared for many mushrooms in the coming week. :) Tonight's dinner was no exception:
Whole-wheat pasta with mushrooms and green peas, in a creamy garlic-parmesan sauce. Again, no measuring, totally made-up kind of dinner. (And it was great!)

magic soup?
I believe I am coming down with a cold. (It's amazing what a couple of nights crappy sleep will do to an immune system that is assaulted by germs all day long!) What do I do? Take my vitamin, and make soup:
Ingredients: canola oil, onion, garlic, celery, carrots, dried thyme, dried rosemary (crushed,) pepper, salt, vegetable broth, diced seitan, frozen peas, and soba noodles, broken into fourths.
Dan's out of town this weekend, so I'll have to take this down all by myself. I think I'll manage. (I'm already thinking about a second bowlful.) Let's hope this is magic soup, and I'll wake up all better tomorrow morning!

Seven Random Things
Yes, I'm a sucker for memes. Liz tagged me for Seven Random Things. Here I go:
1. I have a completely irrational fear of city squirrels. They creeeeeeeep me out when they come too close! They are just weird and twitchy and too friendly for my liking. Ish. (This is coming from a girl who once held a dozen slugs in her hand. So I'm not easily creeped out or anything.) I do like the sweet, small red squirrels that live in northern MN, however -- they are cute, and also know how to maintain a safe distance. :)
2. I am obsessed with ginger. Like, obsessed. Ginger candy, ginger cookies, ginger tea, ginger-based soups, ginger ice cream, etc. If you catch me knawing on a hunk of fresh ginger, promise me you'll slap me upside the head!
3. I have had three favorite colors in my life. When I was small, I liked pink. Somewhere around middle school, my favorite color abruptly switched to blue. Blue persisted until a couple of years ago, when it slowly morphed into green. Strange!
4. I took a dozen years of piano lessons growing up, but have barely played since high school. In fact, I struggle reading bass clef these days! Travesty! I hope to someday own a piano, and can get back to playing.
5. I love driving, I like cars, but I hated owning one. So I donated my car a couple of years ago, and haven't looked back. I hope a LONG time passes before I have to own a car again!
6. I haven't worn makeup in over two years. A couple of weeks ago, I went through my medicine cabinet and finally threw it all away!! It was very liberating. :)
7. I have a weakness for soft, fuzzy, cute pajamas. Especially pajamas with stripes, polka-dots, or critters of any sort. (Except squirrels, obviously -- refer back to #1.)

pre-Thanksgiving and lots of other food!
I took the day off from work this past Friday -- I have desperately been needing a quiet, stay-at-home, relaxing kind of long weekend! Of course, practically all I did all weekend long was cook (and wash dishes.)
Lunch Friday:
I had saved a recipe for Asian Hot Pot from an old issue of Real Simple magazine, and it took me practically two years to try it out! Looking at the recipe, 2/3 cup low-sodium soy sauce seemed like WAY too much, so I cut it down to 1/2 cup. Next time I'll cut down even further -- the soup was still just a wee bit too salty for me! Dan slurped up two or three bowlfuls, however. (He's a salt fanatic.)
Dinner Friday Night:
Vegan pre-Thanksgiving! I am so disappointed that Dan will be out of town Thanksgiving weekend, and decided to overcome my disappointment by cooking us a pre-Thanksgiving meal of our own! Urban Vegan inspired me to make stuffed squash as our entree. I eyeballed the stuffing, using her first list of suggestions, and it was FANTASTIC!!! Definitely the best part of the meal, in my opinion. :) I rounded out the meal with garlic mashed potatoes and the fastest gravy in the (Mid)west, steamed brussels sprouts with melted Earth Balance, garlic salt, and pepper, and a cranberry chutney recipe I saved out of the latest issue of Vegetarian Times. What a meal! Dan and I were both SOOOOO full . . . but the best part was, everything was so flavorful but came together pretty quickly! I made the cranberry chutney Thursday night, roasted the squash, prepped the sprouts, and made dessert (coming next) Friday morning, then pulled everything together in about an hour Friday night!

A big, fat bomb, if you ask me. Dan hates pumpkin pie, so I decided to try a recipe for Double-Ginger Pumpkin Flan from Cooking Light. My review of this recipe? BLECH. The "flan" was mushy and not at all custard-like, the recipe took a ton of prep and additional steps I don't think are needed for a baked custard, I tasted NO ginger flavor (despite the "double" term in the recipe title,) and the custards stuck furiously to the cups and did not produce a lovely caramel sauce expected with flan/caramel custard. Should have just made a tofu pumpkin pie!! Now I know for next year, eh?
I had brunch plans with Courtney Saturday late morning, so I didn't have an opportunity to cook again until Saturday night:
Fajitas!!! WOOO! I typically marinade a package of tempeh, sliced, and a slew of peppers and red onions for at least eight hours before pan-frying in my cast-iron skillet. Served the fajitas this time on spelt tortillas from the co-op, topped with diced tomato, lettuce, guac, crumbled queso fresco, and light sour cream. MMMMMMMMMMMMM.
I also baked Saturday night, which turned into breakfast today:
I took another stab at pumpkin cinnamon rolls after my original failure a couple of weeks ago, with one major change this time . . . I used mashed banana in place of the pumpkin!! Banana cinnamon rolls are JUST as good as pumpkin cinnamon rolls, I think! Glad to know I have one more option when faced with a pile of overripe bananas!
Lastly, lunch today:
I vegetized a recipe for Cream of Turkey Wild Rice Soup, using vegetable broth and diced seitan in place of the chicken broth and turkey called for in the original recipe. This soup could even be veganized by using Tofutti mock sour cream!! The soup was quick and easy, (especially since I made the seitan and cooked the wild rice yesterday,) and extreeeeeemely delicious. Next time, I think I'll cut the amount of diced seitan down to two cups, and increase the veggies, just so I can eat more than one small bowlful before feeling completely stuffed!! :)
Off to meet my friend Ann for a walk . . . I've had one too many cinnamon rolls this weekend, I think! :)
