I just had to share what I had for breakfast today because it's really good, and I've never thought to have it for breakfast before!
Pan-fried polenta! (With a little drizzle of maple syrup -- like pancakes, only better!) (I have a soy sausage pattie and some watermelon on the side, too.)
Leftover polenta is just about my favorite thing in the whole wide world, and now I can have it every meal of the day! (Not that I would . . . but I could!)

I have yet to make polenta. I keep hearing good things about it. Gotta get on that. Maybe I'll start by buying the pre-made stuff I see in cylinder form in the grocery store. Do you use that stuff? Is it any good?

Is it homemade polenta or packaged? Either way I don't care it sounds awesome - I just have a package to use..
Megan, I make my own because it's so easy (and cheap -- only cornmeal and water) that I can't justify buying the prepackaged stuff. (Plus, then you get one serving of the ooey-gooey first batch, before it firms up!) I'm including polenta in my cookbook -- you can be my tester if you want to!
Leslie, are you sending me subliminal messages? I'm hoping I can pick one up at the end of this month using birthday money. :)
Jess, I make my own polenta, but I'm sure it would work fine with the prepackaged stuff, too -- as long as it wasn't some herby/savoury flavor! (Rosemary and maple syrup . . . ick!)
catherine....I'd love to test your polenta! Great idea....then you can get a real novice's point of view on it!
