Friday night baking project

VEGAN LEMON POPPYSEED MUFFINS!!!!

Made from a homemade muffin mix (which includes flax,) some soy milk, canola oil, plain soy yogurt, the zest and juice of one lemon, and a teaspoon of poppyseeds. My apartment smells all lemony and fabulous right now! Mmmmm . . . !

Thanks, Vicki! I wanted to make muffins, but I was ambivalent about what kind. And then I thought . . . lemon poppyseed! Thanks to the advice from fellow bloggers, of course. :) I had to use more juice and zest than I thought I was going to need, to shine through the taste of the whole wheat flour. But it worked!

What exactly happened to your oven, Leslie? I know you had a fire . . . is it broken, or are you scared of it? You could always prepare some batter and borrow a friend's oven, if you are desperate for baked goods! Or could Ray work the oven, and you "supervise?" :)
