Yoga Challenge (day 21,) picnic food, and recipes for Lauren to try!

I'm planning on twenty minutes of "Stress Relief Yoga for Beginners" in about an hour, once my dinner is good and digested. I ended up going for sun salutes last night, which was exhausting but great! I'll need something more rejeuvenating tonight -- Dan and I have plans to go see a friend's band play, but not until MUCH later. Let's hope my yoga can wake me up!

I made picnic food for dinner:

I made Liz's effing amazing coleslaw dressing and tossed it with a cabbage package from the co-op, home-shredded broccoli stalk, and some leftover green onions for the best coleslaw to date, Melody's veggie hot dogs, homemade buns (from Artisan Bread, of course,) and sweet potato fries (from a package . . . gasp!) for one delicious, filling, summery meal. (Oh yeah . . . and it was a completely vegan meal, to boot!)

Oh yes . . . and don't forget that pickle. Mmmmmm . . . pickles!

My friend Lauren left me a comment on my last post about The New Mayo Clinic Cookbook, and I wanted to suggest a few recipes for her to try . . . or anyone, for that matter! (Their recipes can be found online, if you don't want to buy the whole cookbook -- but I highly recommend it! It's gorgeously photographed, beautifully laid-out, and has some great nutrition information, too!)

I've made the following recipes from the cookbook, all with great results:

Corn Chowder with Roasted Poblanos (AMAZING!!!)
Banana-Oatmeal Hotcakes with Spiced Maple Syrup
Muesli Breakfast Bars
Cannellini Beans with Wilted Greens
Yellow Lentils with Spinach and Ginger
Caribbean Red Beans and Brown Rice (great with sauteed greens and broiled plantains!)

And I'm going to make the Tuscan White Bean Stew for lunch tomorrow . . . I'll let you all know how it turns out!
